Puttanesca-Style White Beans

Delicious meal that will have you feeling full for hours! Add any meat you desire for some added protein.

INGREDIENTS

  • 3 cloves of garlic, finely chopped
  • 2 tbsp olive oil
  • 5 tbsp capers
  • 75 g black olives, sliced
  • 75 g sun-dried tomatoes, chopped
  • 500 g cooked white kidney beans or cannellini beans
  • 250 g passata
  • 300 ml vegetable stock

To serve:

  • Chopped parsley
  • Chilli flakes (optional)

PREPARATIONS

1. In a large pan, heat the olive oil over medium heat. Add the garlic and sauté for 1minute until fragrant.

2. Add the capers, olives, and sun-dried tomatoes to the pan. Cook for 3-4 minutes, stirring occasionally.

3. Add the cooked beans to the pan and stir to combine with the other ingredients. Cook for 1-2 minutes to let the flavors infuse into the beans.

4. Pour the passata and vegetable stock into the pan, and bring the mixture to a gentle simmer. Cook for 10-15 minutes, or until the sauce has slightly thickened.

5. To serve, sprinkle chopped parsley and chili flakes on top of the meal. Enjoy!
